Combination Ovens

Although relatively new to this country, combination steamer/ovens have been a mainstay of Europe cooking for years.  The unit actually operates as three units in one:  a convection oven, a convection steamer, and a combination of the two.  The result is a versatile piece of equipment capable of a multitude of functions within a single space.  Food does not dehydrate as in conventional deck ovens or convection ovens, resulting in higher meat yields.  The combination of steam and convected heat results in better heat transfer than conventional ovens, cooking food more quickly.

In addition, the combination oven can proof can hold dough slow cook and hold meats, defrost, reheat, broil or grill.  Combination ovens are available in a variety of sizes, from small counter models to large roll-in units.

Combi-therm takes combi oven / steamers into the future with an easy-to-use automatic electronic control. Cooking controls include an automatic humidity feature, with digital instructions in multiple languages. An optional programmable control has the memory capabilities for up to 250 cooking cycles - each with up to 20 cooking steps.

Standard features also include a patented, automatic steam venting system; a safety feature built into all Combitherm combi oven models. This vents all steam from the combi oven compartment immediately before cooking time expires to protect the operator.

WHAT IS A COMBI/OVEN STEAMER?

A Combi Oven is a unique style of convection oven that steams, poaches, roasts, broils, bakes and rethermalizes. You can combine three great modes of cooking in one oven - steam, hot air, and a combination of both.

  • HOT AIR MODE - Gentle Circulated Hot Air
Provides uniform temperatures throughout the cooking chamber, assuring even browning on baked goods and faster cooking times as moving air speeds heat transfer to food.
  • COMBI MODE - Combination of Steam and Hot Air
By combining both the steam and hot air modes, the Combi mode cooks up to 50% faster than convection ovens while maintaining the food's essential moisture. The Combi mode eliminates the need for basting roasts, reduces shrinkage while giving perfect browning and is ideal for baking hard crusted breads. Combi is perfect for rethermalization (reheat) at 275°F / 135°C.
